Irma is Michael’s aunt, originally from Parma. She was the one who nicknamed Michael’s father Bill, hence “BILOTTO”. Today
Bill is 90 years old, enjoys good health, and is a lover of white wines, especially the Bilotto.
GRAPE VARIETY AND VINEYARD Nascetta and Sauvignon blend. Nascetta is an ancient native Piedmontese vine of the
Langhe and Cuneo area; its rediscovery is recent and today only few thousands bottles are produced. The grapes are
cultivated in the hectares of the Vinicola Arno property using the Guyot method. Manual harvesting takes place separately
and at different times following the ripening of the grapes, usually from the end of August to the first two weeks in September.
SOIL:
Soil is characterized by clay, sand and limestone. Cultivation method Guyot, with South-East exposure.
WINEMAKING:
The Musts are assembled during fermentation in steel tanks at a controlled temperature of 17,5° C for a duration of 14 days with pumping over the lees for 1 month. Maturation takes place in stainless steel tanks for at least 4 months. Bottling is done at the beginning of the year followed by aging
in bottle for a few months.
TASTING NOTES:
A long-lived wine which fully expresses all the olfactory characteristics of Nascetta and Sauvignon. It has a pale straw yellow color, fruity to the nose with exotic scents and honey finish. In the mouth it is fresh, mineral, with a good acidity which gives longevity. A wine for aperitifs, excellent with raw fish, white meats and fresh cheeses, but also for the whole meal on hot summer days.
SERVING TEMPERATURE: Recommended Tasting Temperature 12°.
