Winemaking Notes:
It’s a question of taming the beast! Monte has terrific colour,
serious tannin, and generous flavours. So we apply the KISS
principle and handle it gently… destem to an open fermenter,
pump over just enough to keep it happy, then press; then off it
goes for a snooze in mature French oak barrels. We rack it once
(to work with gravity to clean it up), but otherwise there it rests
until blending and bottling.
Tasting Note:
Look at that colour! As deep and as crimson as it gets… and it’s
backed up by a powerful yet fresh, brightly-fruited palate. Is the
aroma predominantly berries or cherries? We can’t decide… but
whichever it is, it’s absolutely delicious! It’s a wine of structure:
firm and dry, with a backbone of acid and tannin that will ensure
our Monte will cellar for 8-10 years.
Food Pairing:
Great drinking all year round, especially with a platter of Italian
cured meats, strong salty cheeses or a big bowl of true Italian
tomato based pasta.
