Winemaking Notes:
The longest-living of our Shiraz wines wear the ‘Black Hinge’ label with
pride. Power and richness, but balanced, in ripeness, alcohol, and oak. A
small open fermenter, perfect for gentle hand plunging, was used to
ensure soft but thorough cap management. Run to barrel for natural
malolactic fermentation and a long sleep of 16 months in fine French
oak barrels.
Vineyard Report:
Entirely produced from vines grown at Pindarie. The Black Hinge
Shiraz for the 2020 vintage was selected from the lower section of
“Tony’s Block Shiraz”, on our famous Terra rossa soils. Growing on
sloping aspects gives us flexibility as to where we select the grapes in
accordance with the season and allows for creative diversity in
winemaking. Every season is different!
Tasting Note:
The final wine has terrific structure, is concentrated, dense, and rich in
spices and berry fruits leaving you with a luscious lingering mouth feel
from every sip. It will reward the consumer with drinking pleasure for at
least a decade. Not unlike the 2013 vintage that’s still ageing well.
Food Pairing: Ideal with dishes rich in beef, especially Wagu.
