VINEYARD: This wine is grown in the best South, South-East exposures. We carefully follow the season’s course and carry out accordingly a very accurate thinning in August and an accurate selection during the harvesting process.
AVERAGE ANNUAL YIELD: Does never exceed 6000 Kgs per hectare.
AGEING AND REFINING: Classical winemaking with destemming and superficial maceration of grapes for 8 – 10 days under very careful survey.
The ageing is carried out in 30 hectoliter wooden barrels for about 8 months until the bottling after repeated tastings.The refining is carried out in the bottle for a couple of months before the distribution.
FRAGRANCE: Wine spreading an intense, ethereal and persistent fragrance of ripe fruit and blueberry jam.
TASTE: The elegant glimmer of wood is accomplished by a full, warm and sapid light tannin taste with a pleasant, slightly bitter aftertaste.
FOOD PAIRING: Sufficiently structured and harmonic to be paired with elaborated and important courses based on filled pasta, stewed or braised meats, aged cheese.
PRESERVATION: It improves during the first 4 – 5 years since harvest, but may be stored for over 10 years.
SERVING TEMPERATURE within 16 and 18°C.
RECOMMENDED WINE GLASS: Glass with average rim.
