Carus Vini Chianti Classico Estate

Carus Vini is located in San Casciano in Val di Pesa, one of the most picturesque and prestigious areas of the Chianti Classico region in Tuscany, Italy—renowned worldwide for exceptional wine production.

The estate, owned by Guido Carissimo, spans approximately 26 hectares, including 13.5 hectares of vineyards and 4.5 hectares of olive groves. Since the 2017 harvest, all Carus Vini vineyards have been certified organic, reflecting a strong commitment to sustainability and environmental stewardship.

Terroir of Chianti Classico

The land has been cultivated since Etruscan times, with a long-standing tradition of producing high-quality wine and olive oil.

  • 1398: The first historical document referencing “Chianti” wine
  • 1932: A Ministerial Decree officially defined the Chianti wine region
  • Chianti Classico: Recognized as the original and most historic production area

The term “Classico” distinguishes this authentic territory from the broader Chianti zones, highlighting its heritage, strict standards, and superior quality.

 

 

Giacomo Tachis and the Origins of the Estate

The modern Carus Vini estate was developed in the mid-1990s with the collaboration of legendary Italian enologist Giacomo Tachis, known for revolutionizing Italian winemaking.

The Carissimo family, with centuries of agricultural experience in Campania and Puglia, relocated to Tuscany in 1997. In 2011, they acquired the current estate, located next to their historic stone farmhouse.

Following the acquisition, Guido Carissimo invested significantly in vineyard development and winery modernization to achieve the estate’s vision of producing premium-quality wines.

A Sustainable and Green Wine Farm

Carus Vini is dedicated to minimizing environmental impact through innovative and eco-friendly practices:

  • Advanced thermal insulation in the cellar
  • A 20 kWp photovoltaic system for renewable energy
  • Solar-powered heating and energy-efficient infrastructure

Sustainable Agriculture and Winemaking Philosophy

The estate follows integrated agriculture principles, combining modern technology with respect for nature:

  • No chemical products used in vineyards
  • Natural nitrogen-fixing cover crops between vine rows
  • No artificial irrigation
  • Hand-harvested grapes
  • Selective vine replacement to maintain vineyard health and maturity

Energy use is also sustainable:

  • Heating powered by solar energy and wood sourced from the estate
  • Solar panels supply most of the winery’s electricity needs
