Winemaking Notes:
2021 was a balanced vintage with average yields and the climate
was kind. Grapes were fermented, pressed and matured in
predominantly French oak, of which 30% is new oak (we use 5%
American oak each year for length and spice). After two rackings
over time to naturally clarify the wines, we selected and blended
those barrels that best reflected the season and the vineyard. After
11 months asleep in oak, we bottle and let it rest again before
release.
Tasting Note:
Well balanced, elegant, deep purple red, powerfully fragrant with
an abundance of fruits: blackberry, cherry, black olive, spices, and a
hint of meaty complexity. A faint aroma of fine toasted French oak
barrels. Gentle yet full-flavoured, it’s young! Beautiful strong
tannins; despite its youth, and with a gentle long palate. Yes: it will
cellar beautifully.
Food Pairing:
Ideal with a wide range of red meat cuisine, especially dishes with
beef or lamb but do not overcook the meats.
